sopa criolla: the best fridge management
I’m gone. Have up and left my fridge to its own devices as I recklessly and hungrily galavant throughout France, Israel and Spain for 2 weeks on a quest for incredible eats (and whatever may follow). I trust a good story or two will come out of my trips. Until then, make sure your fridge is as crazy-stocked as mine. And if it gets out of control (my tolerance is high): make soup.

Me he esfumado. Abandone mi nevera imprudentemente para escaparme a una aventura que recurira partes de Francia, Israel y España durante 2 semanas en búsqueda de comida inolvidable. Confío que un buen cuento o dos saldrá de mis viajes. Hasta entonces, asegúrense que su nevera este tan orgullosamente llena como la mía. Y si empieza a descontrolarse, (mi tolerancia es alta): usen todas las verduras para una sopa.

Sopa Criolla
Great to empty out the veggie drawer!
1 whole chicken, cut into pieces
8 cups cold water
1 large onion
4 large garlic cloves, peeled and crushed
1 chicken bouillon cube
2 leeks
2 carrots, chopped in 1-inch pieces
2 potatoes, peeled and cut into 2"inch cubes
1 cup frozen yuca root
1 green plantain, cut into thick rings
2 sweet potato, cut into thick rings
2 stalks celery, minced
2 ears of corn, halved
1 large bunch cilantro
1 tablespoon salt, or more to taste
Bring chicken, water, and onion to a boil in a large pot.
Simmer for 30 minutes. Skim top off soup.
Add remaining ingredients. Bring to a boil. Simmer gently for 1 hour.
Adjust seasoning.
Serves 8
SOPA CRIOLLA :
1 pollo entero, cortado en trozos
8 tazas de agua fría
1 cebolla grande
4 dientes de ajo, pelados y aplastados
1 cubito de caldo de pollo
2 ajo porros
2 zanahorias, cortadas en pedazos de 1 pulgada
2 papas, peladas y cortadas en 2 "cubos de pulgada
1 taza de yuca congelada
1 plátano verde, cortado en anillos gruesos
2 boniato, cortado en anillos gruesos
2 apio de tallos, picado
2 mazorcas de maíz, partidas por la mitad
1 manojo grande de cilantro
1 cucharada de sal o más, al gusto
Traiga el pollo, agua, y la cebolla a hervir en un pote grande.
Hierva a fuego lento durante 30 minutos.
Añada ingredientes restante y subir temperatura hasta que la soba hierva. Baje a fuego lento y cocine durante 1 hora.
Ajuste el condimento.

While traveling in Peru, I savored this hearty soup that satisfied so well particularly on cold drizzly days. I’ve tried most of the Peruvian places in Corona-Jackson Hts, Queens but sopa criolla either eludes the menu or is mediocre
